My husband’s work is seasonally, so in the summer time he is home a lot.Which means he needs a more sustaining lunch to make it through the day on the farm.Everyone loves this breakfast skillet recipe, and I always get comments on how delicious it is. Last year it was part of our ladies retreat breakfast menu, and it was a hit.Hearty and delicious, this skillet contains bacon, eggs, potatoes, and cheese. Only 4 ingredients, and can be tossed together in half an hour.If you are looking for a way to cook potatoes for breakfast, here is a recipe that is sure to please.My family and I just dug our potatoes from the garden, and it’s a cheap and hearty way to feed out family of 7. Potatoes are also healthy, despite what some diet claims are.Especially if you are able to grow and harvest potatoes from your own garden.This breakfast skillet recipe with potatoes and bacon can also be even more flavorful with added veggies. I highly recommend adding onion and red peppers.My kids are a bit picky, and prefer it without, but most adults enjoy those added flavors.You can use homemade bacon, or store bought for this, both are delicious.How To Make This Breakfast Skillet With Potatoes, Eggs, and BaconYou start by frying one package of chopped bacon (375 grams) in a frying pan. To make this a one skillet dish, use a deep round pan.More bacon is always a good thing, so if you have the 500 gram package, go ahead and use it all.While the bacon is frying, peel and cube 2 large potatoes. Place them in a pot, covered with water and .5 tsp salt. Bring to a boil, and cook for 10 minutes.Drain, and set aside. You can also use a quart jar of canned potatoes if you have those in your cellar.Once your bacon is crisp, remove from pan, and set aside. Pour out half of the bacon fat into a separate container. Add potatoes to pan, and fry until crisp.While potatoes are frying, mix together a dozen eggs in a separate bowl. Add some salt and pepper to the eggs, being careful not to overdue. Because bacon is usually quite salty, be careful not to over season the eggs.Once potatoes are fried, add whipped eggs to potatoes. Fry until eggs are almost completely cooked. Add bacon and cheese, and mix altogether.Add some extra cheese on top, and a sprinkle of parsley.
